Designed for premium chocolate production, the Petzholdt BCV Batch Conche Vertical delivers exceptional results, especially in the production of dark and high-quality milk chocolate. It supports both totally dry conching and liquid conching for masses or creams, thanks to its integrated spraying device. Ideal for frequent recipe changes and artisan chocolate applications, the BCV is the solution for flexible, high-performance conching.
The BCV shaft features an agitator arm that scrapes the batch surface for superior heat transfer, while inner arms use gravity to ensure efficient kneading and stress distribution. This promotes uniform cocoa butter redistribution, volatile removal and improved viscosity.
An integrated spray homogenization unit enables optional liquid conching, and flavor is further refined by Maillard reaction enhancement through the controlled conche headspace, managed by the Flavor Monitoring Cockpit and air conditioning system.
