The Petzholdt TFL Thin Film Evaporator Liquor is a common and traditional alternative to nib alkalization. It is specifically engineered to gently treat cocoa liquor. It debacterizes the product, enhances flavor development and reduces conching time.
Cocoa liquor forms a thin layer on the heated evaporator wall, where moisture and acidic volatiles are removed under vacuum – without exceeding 100°C. This preserves key flavor compounds while reducing unwanted acidity and water content.
The result: a cleaner, more balanced liquor optimized for high-quality chocolate production.
