The PROBAT BRM Batch Roaster Malt is expertly designed for processing green or dry malt and raw barley. While many malts are bagged after germination and kilning, it is during the roasting process that specialty malts are created. This versatile roaster offers brewers a wide range of options to fine-tune their malt profiles, allowing for customized flavor and quality in every batch.
The BRM uses a rotating drum through which air flows to efficiently transfer heat to the malt. For crystal and cara malts, green malt is steeped, germinated and slowly dried by conduction without airflow inside the drum to enhance sweetness. After the saccharification phase, the roasting process continues with convection heat from the hot air inside the drum, developing a deeper flavor and color.
To achieve a richer flavor and color without the same sweetness as crystal and cara malts, dried malt (kilned) or raw barley is used for roasted malt or barley. Roasting primarily relies on convection, whereby heat is transferred to the malt by the flow of hot air within the drum.
The external heating oven and single-wall drum enable fast responses to varying product stages, and the hygienic design ensures that the product never comes into contact with insulation, thus maintaining optimal quality.
