The Lehmann CRL Continuous Roaster Louver is specifically designed for premium cocoa bean roasting, enabling the development of rich, product-specific flavor profiles through precise thermal control. Utilizing a counter-current hot air system, cocoa beans are gently introduced from the top and cascade through multiple levels, while hot air rises in the opposite direction. This design ensures efficient heat transfer, even roasting, and optimal flavor development.
Integrated with the Humidity Monitoring Cockpit, the roaster features advanced humidity and moisture control that finely regulates the drying speed. This maximizes the Maillard reaction, unlocking deep, complex flavors that elevate the quality of each batch.
To ensure effective microbial reduction before winnowing, the Lehmann BDB Batch DeBacterizer offers precise control of critical processing parameters, providing reliable and consistent debacterization performance.
