The Flavor Monitoring Cockpit allows chocolate processors to take full control of volatile removal and flavor development during the conching process to optimize efficiency, consistency and product quality.

The AI-powered Flavor Monitoring Cockpit continuously measures VOC levels and humidity in the volume above the chocolate mass in the conche, known as the headspace. It visualizes characteristic VOC fingerprints, detects process deviations and automatically adjusts key parameters – processing time, headspace conditioning, energy input and temperature profile – to compensate for raw material variations.
